CAULIFLOWER AND VEGAN SMOKED GOUDA SOUP

Servings: 4-6

Ingredients:​

✓1 white or yellow onion, diced
✓1 garlic clove, minced
✓4 cups cauliflower florets
✓4 cups chicken-less broth (or vegetable broth)
✓1/2 block Aviva smoked Gouda, shredded

Steps:​

In a big pot over medium heat sauté onion with a bit of oil until translucent

Add garlic and cauliflower, and sauté for a few minutes

Add broth and bring to a boil for 2-3 minutes

Lower the heat and let cook for around 15 minutes or until the cauliflower is tender

Add Aviva’s shredded smoked Gouda

Transfer to a blender and blend until smooth
