Vegan Spanakopita- Greek Spinach and Feta Triangles

Servings: 8 – 10 triangles

Ingredients:​

✓8 sheets vegan phyllo or puff pastry dough
✓1 124 g package spinach
✓½ block Aviva feta, shredded
✓2 garlic cloves, minced
✓1 small onion, finely chopped
✓½ tsp. thyme
✓½ tsp. oregano

Steps:​

Preheat oven to 350 F

Sauté onion in a skillet with a bit of oil until translucent.

Add the rest of ingredients except feta and continue to sauté

Transfer to a bowl with the shredded feta

Using a bit of oil, stick together 2 sheets of phyllo dough one on top of the other and cut in three strips. Working with one strip at a time, put some of the filling in one end of the band and fold repeatedly forming a triangle.

Brush each triangle with oil and bake for 25-30 minutes or until golden.
